Join us on Saturdays this July for our “Wines of the World” dinners in Amorosa. The restaurant was recently renovated to connect indoor and outdoor dining spaces, affording guests tantalising views of the pool and sea. Each week, sommelier George Kassianos chooses three wines from a specific region (such as France, Italy, Chile, or Australia) and advises executive chef Laurent Brun, who then creates a three-course menu pairing each wine with a complementary dish. When you arrive for the dinner, the sommelier will lead you through a flight of the three wines, giving you the chance to taste each independently as he highlights its distinctive qualities. Then you will be seated for your meal, where each course allows you to appreciate the interplay between a wine and the chef’s culinary creation. Annabelle’s updated Mediterraneo is the perfect spot to launch a cultural evening. Our seaside restaurant features new bespoke furniture in the style of a rustic taverna and boasts commanding views of Pafos Harbour. Executive Chef David Goodridge describes the refreshed menu as “highlighting Cypriot produce, Mediterranean flavours, and the meze dining experience through innovative and refined presentations.” Try our King Crab Salad (with compressed watermelon, ouzo, and avocado puree) or the Lamb Kofta (with citrus-infused yoghurt, cucumber, and cherry tomato salsa with spring onions) as you enjoy nightly live music and sea breezes. Afterwards, take a short stroll by the harbour to the Castle Square and enjoy one of the many concerts on offer through Pafos 2017—European Capital of Culture. Opera lovers can enjoy Mozart’s The Abduction of the Seraglio or the contemporary Cassandre. Other offerings include dance performances and the French aerial ensemble Compagnie Retouramont. During Easter weekend, many Cypriots return to their ancestral villages to celebrate with family and friends. In this spirit, Annabelle is organising a day trip to two nearby villages. Our bus departs from the hotel at 10:30 and makes a forty-minute journey through the colourful countryside to Pano Panayia. We’ll stop for a visit at the Chrysorroyiatissa Monastery. The 18th-century building features delicate frescoes, a display of religious artefacts, and an icon of the Virgin Mary and Christ attributed to the apostle Luke. Next, the bus departs at 11:45 for the village of Lemona, where we’ll tour the Tsangarides Winery. The Tsangarides family follows an organic method of winemaking that goes back five generations. They feature local varieties such as the white Xynisteri and the red Maratheftiko grapes. After the tour, enjoy a tasting of their full range of wines along with a selection of cheeses and charcuterie. (€35 per person; book with Guest Services by 14 April at 18:00.) The New Year is bringing many luxurious upgrades to Annabelle. Amorosa, our signature fine dining restaurant, will be renovated to connect indoor and outdoor dining spaces. The new look features driftwood-inspired furnishings, boldly patterned fabrics, and leather accents. Day or night, hang out and sip cocktails as you overlook the sea and pool. Or enjoy lunch or dinner al fresco as you sample Amorosa’s fresh new menu. Meanwhile, our seafront restaurant, Mediterraneo, will be updated with custom-made furniture in the style of a rustic Mediterranean tavern: try out the new menu as you enjoy the views. Back by the main pool, you can bask in the warmth of the expanded sun lounge areas. The upgrades extend to the guest rooms, with complete renovation of all Deluxe Suites, Deluxe Sea Facing Rooms, Studio Suites, Studio Suites with Pool, and Superior Suites. Think natural wood tones, cool marble, wooden plantation shutters, a touch of brass, and a soothing palette of seaside hues. All renovations should be completed by the end of February.

Long before the Christmas tree became popular in the Greek islands, Greek children decorated model boats and carried them from door to door as they sang Christmas carols in celebration of the season. In recognition of this tradition, Annabelle’s chief baker, Doros Nearchou, is constructing a large scale Christmas boat, or karavaki, out of biscuits in the Lobby. Nearly four meters long and three meters high, the boat is made of small pieces of gingerbread baked daily on site and applied on top of a wooden base.
The boat will take hundreds of working hours to complete. Guests are encouraged to stop by Annabelle’s Lobby, watch the baker’s progress as our karavaki takes shape, and enjoy a seasonal cocktail or afternoon tea.
