Paul Hollywood, who began his career as Annabelle’s chief baker in the late 1990s, returned to the hotel last week to film an episode of Paul Hollywood City Bakes. The series takes Hollywood around the world to explore the food heritage in various cities. In Paphos, he was joined on camera by Doros Nearchou, our head baker, and Lygia Vasiliou, our pastry chef de partie. They prepared four kinds of bread: olive, seven seed rye, brown walnut and raisin, and white oregano and mint. They were also filmed preparing a platter of spinach and feta with herbs, local oranges, and yoghurt dough. Later, Hollywood joined a group of local friends and colleagues on camera for a Cypriot feast featuring the breads as well as traditional salads, dips, halloumi, octopus, sheftalia, red mullet, and a special preparation of lamb kleftiko.
