Annabelle Builds a Christmas Karavaki

Long before the Christmas tree became popular in the Greek islands, Greek children decorated model boats and carried them from door to door as they sang Christmas carols in celebration of the season. In recognition of this tradition, Annabelle’s chief baker, Doros Nearchou, is constructing a large scale Christmas boat, or karavaki, out of biscuits in the Lobby. Nearly four meters long and three meters high, the boat is made of small pieces of gingerbread baked daily on site and applied on top of a wooden base. Next to the boat you will find a small fish tank; look through the porthole and watch the little fish swim by! The boat will take hundreds of working hours to complete. Guests are encouraged to stop by Annabelle’s Lobby, watch the baker’s progress as our karavaki takes shape, and enjoy a seasonal cocktail or afternoon tea.
